Sub Rosa, Latin for "under the rose," comes from the ancient association of the rose with 
confidentiality or secrecy. The tradition of hanging a rose over the door where secret meetings were held, was a reminder to guests not to betray the confidence of what was spoken sub rosa.
The rose over the door of the wine cave is a reminder to our customers that what is spoken sub vino (under the influence of wine) is also sub rosa.
